I know this is nothing new, as plenty of people have mentioned the UX/UI “downgrades” from MacOS Monterey to Ventura.
That said, I didn’t really appreciate some of these experience issues until I had to update my work MacBook Pro (my home MacBook Pro is too old to be upgraded, so it’s now stuck on Monterey). I’m highlighting a few things that I either didn’t see called out or I don’t remember being called out.
This one kills me the most. They’ve moved so much information and selections under modal windows that you have to open to get something done. Here are a couple that bug me the most:

Again, something that has been called out by others for the new System Settings app, but also applies to other windows I’ve seen, most obviously the About this Mac dialog.

With Mac screens getting bigger and denser, why does this have to be this small and narrow?
